Developing Your School Food Safety Program

Program of the College of Agricultural Sciences, and Erie Cooperative Extension

Training Topics:

The training program will cover development, implementation, and maintenance of a food safety program with HACCP principles. This training will include the following topics:

  • Developing Standard Operating Procedures (SOPs)
  • Grouping menu items into Process categories
  • Writing a portion of the food safety plan
  • Keeping records

This training reflects the UDSA guidance and utilizes USDA/NFSMI training materials.

Why Attend ?

Schools participating in the Child Nutrition Program (CNP) are mandated to write HACCP-based food safety programs. Hazard Analysis and Critical Control Point (HACCP) is a preventative system to reduce the risk of foodborne illness through appropriate food handling, monitoring, and record keeping.

Penn State Cooperative Extension has partnered with the Pennsylvania
Department of Education to train schools to write these food safety programs. Training will be conducted by Cooperative Extension Educators with extensive experience in food safety instruction and training in process-based HACCP.

Educators will use a training program developed by the National Food Service Management Institute (NFSMI).
